Organoleptic Characteristics

Pale ruby red. Spicy notes characterize the nose, giving way to hints of undergrowth, particularly cherries preserved in alcohol, accompanied by salty notes of seaweed and salted capers.
On the palate, the contrast between freshness and savory character is striking, synonymous with elegance and a harbinger of longevity.

Vinification

The grapes, harvested by hand in small crates, are quickly brought to the winery where they undergo manual selection on a sorting belt.
Partially destemmed and partially in whole bunches are sent to concrete tanks, where they macerate for approximately 10-12 days at a temperature of 22-25°C.
Each day, several times a day, manual punch-downs are performed with the aid of a pneumatic puncher. Once fermentation is completed the grapes macerate for a few
more days, after which they areracked and transferred to wooden barrels.
The resulting wine ages in 30-hl barrels for almost two years, followed by a few months of aging in concrete before bottling.
