Vinification

The grape clusters, harvested by hand into small crates, arebrought to the winery and gently pressed whole in a soft pneumatic press. The must from the first fermentation at controlled temperature naturally settles cold, preserving the delicate aromas of the fruit and producing a base wine rich in freshness and acidity.
Asecond fermentation or tirage (prise demousse) follows, with selected yeasts added in the bottles using the traditional method, where the sparkling wine rests on the lees for 24 months.
